Mozzarella and Chorizo Gnocchi Bake

This mozzarella and chorizo gnocchi bake is the perfect 30-minute weeknight meal. Full of flavour from the spicy chorizo, this dish is super easy to make and is so tasty and comforting.

Baked gnocchi in a rich and spicy chorizo and tomato sauce that is topped off with mozzarella and fresh basil. Smokey chorizo paired with soft and fluffy gnocchi and full of melted mozzarella. I mean what more could you want! This bake is so comforting and it’s so delicious!

Who doesn’t love a pasta bake? It’s cheap, comforting and tasty. Gnocchi is a great replacement for pasta and is quicker to cook as you don’t have to boil them first. These potato dumplings make for a super speedy and hearty dinner. I love gnocchi in a tomato sauce and by adding the chorizo, it adds a smoky and spicy flavour. The addition of the mozzarella compliments the spicy sauce perfectly.

It’s a simple but tasty and filling dish. It serves 6 so it’s great for the whole family. This mozzarella and chorizo gnocchi bake is so easy to prepare and only requires a few ingredients, which you’re likely to already have at home. I always have chorizo, gnocchi, onions and passata at home so I make this dish really often, especially because it’s so easy to make.

The perfect weeknight meal

This mozzarella and chorizo gnocchi bake is one of my favourite mid-week meals. It takes only 30 minutes to make and doesn’t require much effort on your behalf – you’ll only need to chop the onions and chorizo and stir occasionally. This is the perfect meal after a long day at work and it is so comforting and delicious!

The great thing about gnocchi compared to pasta is that you don’t have to boil the gnocchi first. By adding the gnocchi to the sauce and allowing to simmer for 5 minutes before you bake it, your gnocchi will be slightly crispy on the outside but so soft and fluffy on the inside.

Ingredients needed to make Mozzarella and Chorizo Gnocchi Bake

Gnocchi

Use fresh gnocchi for this recipe. It doesn’t matter if it’s potato, sweet potato, spinach etc. gnocchi, as long as it’s fresh! This way you don’t have to boil the gnocchi, which speeds up the process, you just have to add it to the sauce. This way, the gnocchi soaks up all the flavour from the spicy chorizo and tomato sauce.

Chorizo

Good use quality chorizo! I like to use Spanish chorizo for all of my recipes. If you can’t find Spanish chorizo, then go for the premium brands at your local supermarket. I like to use a spicy chorizo as it adds extra flavour to the sauce but if spice isn’t your thing then use a mild chorizo.

Cheese

This recipe calls for mozzarella only. I like to use a ball of mozzarella which I cut into thin slices. Mozzarella complements the flavours of the spicy chorizo perfectly but you can also add some parmesan or mature cheddar if you want a deeper cheesy flavour.

Basil

Fresh basil works great with this bake. Adding chopped basil to the sauce adds a hint of freshness. I also like to finish the bake off by adding a few fresh basil leaves once it has come out of the oven.

Making a Mozzarella and Chorizo Gnocchi Bake

There’s not much to this recipe really. It’s really just making the sauce and baking everything in an oven dish. It’s a really easy meal to make and literally takes 30 minutes. Essentially it comes down to three steps:

1 – Fry the onions and chorizo until they’re crispy.
2 – Make the sauce with the gnocchi.
3 – Add the mozzarella and bake in the oven.

Start off by frying the onions for 5 minutes before you add the garlic and the chorizo. You want to make sure that the chorizo is crispy before you go onto add the tomato paste, the passata and the spices. The red oil that the chorizo releases when it’s cooking is the BEST thing ever! This is what adds so much flavour to this dish. Finish off by adding the chopped basil and gnocchi and allow to simmer for 5 minutes.

Now, transfer the gnocchi to an oven dish and top off with the slices of mozzarella. Bake in the oven for 15 minutes – this really thickens up the tomato sauce. That is literally it! It’s so quick and easy to make, which is why this mozzarella and chorizo gnocchi bake is one of my favourite mid-week meals. This dish takes 30 minutes to make from start to finish and it doesn’t take much effort to make it.

Tips for making Mozzarella and Chorizo Gnocchi bake

  • Use a good quality Spanish chorizo for this recipe.
  • Use a spicy chorizo if you like a bit of spice in your food. If you don’t use a mild chorizo.
  • This recipe calls for fresh gnocchi. It can be potato, sweet potato or spinach gnocchi, it doesn’t matter as long as it is fresh.
  • Make sure that the chorizo is crispy before you add the tomato paste and passata.
  • If you want the bake to be cheesier you can add a little bit of parmesan or mature cheddar as well as the mozzarella.
  • This recipe serves 6 people but if you would like it to serve 4 then add 400g of gnocchi instead of 600g.
  • Don’t skip the baking in the oven step. Baking the gnocchi in the oven for 15 minutes thickens up the tomato sauce.

Step by Step Instructions: Mozzarella and Chorizo Gnocchi Bake

Step 1

Preheat the oven to 190C/170C Fan/ 375F/ Gas 5.

Step 2

Chop the onions finely. Using a large frying pan, fry the onion in the olive oil over medium heat for 5 minutes.

Step 3

Add in the garlic and fry for 2-3 minutes.

Step 4

While the garlic is frying, cut the chorizo into small chunks and add to the frying pan. Fry for 2-3 minutes, stirring occasionally.

Step 5

Add the tomato paste and mix together. Then, add the passata and the spices and mix well.

Step 6

Chop the basil and add it to the pan, along with the gnocchi. Allow to simmer for 5 minutes. Stir occasionally.

Step 7

Transfer the gnocchi to an oven dish. Slice the mozzarella and place on top of the gnocchi. Bake for 15 minutes. Top of with a few fresh basil leaves.

  • 150g chorizo, diced
  • 1 tsp tomato paste
  • 400g passata
  • 600g fresh gnocchi
  • 1 tsp brown sugar
  • ½ tsp cayenne pepper
  • 1 tsp mixed herbs
  • 1 tsp oregano
  • salt and pepper to taste
  • Handful of fresh basil, chopped and a few leaves to garnish
  • 200g mozzarella ball, sliced

Instructions

  1. Preheat the oven to 190C/170C Fan/ 375F/ Gas 5.
  2. Chop the onions finely. Using a large frying pan, fry the onion in the olive oil over medium heat for 5 minutes.
  3. Add in the garlic and fry for 2-3 minutes. Next, add in the diced chorizo and fry for 2-3 minutes, stirring occasionally.
  4. Add the tomato paste and mix together. Then, add the passata and the spices and mix well.
  5. Add the chopped basil, along with the gnocchi and simmer for 5 minutes, stirring occasionally.
  6. Transfer the gnocchi to an oven dish and top with the sliced mozzarella. Bake for 15 minutes and garnish with a few fresh basil leaves.

Notes
